For the Shortbread Crust:

1 ½ cups all-purpose flour

½ cup granulated sugar

¼ cup confectioners' sugar

½ cup unsalted butter, softened






For the Lemon Filling:

2 large egg yolks

½ cup granulated sugar

2 tablespoons freshly squeezed lemon juice

1 teaspoon grated lemon zest

1. Preheat your oven to 350°F (180°C). Line an 8-inch square baking dish with parchment paper for easy removal.


2. Make the crust: In a bowl, combine flour, granulated sugar, and confectioners’ sugar. Add the softened butter and mix until a soft dough forms. Press evenly into the prepared baking dish.


3. Bake the crust for 20–25 minutes, or until lightly golden.


4. Prepare the filling: In another bowl, whisk together the egg yolks, sugar, lemon juice, and lemon zest until smooth.


5. Pour the lemon filling over the baked crust and gently spread it evenly.


6. Bake again for 20–25 minutes, or until the filling is just set.


7. Cool completely, then refrigerate for 30 minutes before slicing into bars.
