Homemade Ras Malai | A Milky, Melt-in-the-Mouth Dessert


🍮 Ras Malai Recipe | Soft, Milky & Melt-in-the-Mouth Delight


Ras Malai is one of the most loved desi desserts. Soft, spongy paneer balls soaked in sweet, cardamom-flavored milk and garnished with pistachios. It’s rich, festive, and surprisingly simple to make at home!




📝 Ingredients


For the Rasgullas (Malai Balls):

1 liter full-fat milk

2 tbsp lemon juice (mixed with 2 tbsp water)

1 ½ cups water

½ cup sugar

1 tsp rose water (optional)


For the Milk Syrup:


1 liter full-fat milk

½ cup sugar (adjust to taste)

3–4 green cardamoms

Few strands of saffron (optional)

1 tsp rose water or kewra essence

Chopped pistachios & almonds for garnish---


👩‍🍳 Instructions


Step 1: Make Chena (Paneer)

Boil 1L milk. Once it starts bubbling, add lemon juice gradually while stirring.

When it curdles and separates, turn off heat.

Strain using a muslin cloth and rinse under cold water to remove the lemon taste.

Hang for 30–40 minutes to drain excess water.

Step 2: Knead & Shape Balls

Knead the chena for 8–10 minutes until smooth and soft.

Divide and shape into small, smooth balls (they’ll expand later).



Step 3: Cook Rasgullas

In a pot, boil 1½ cups water + ½ cup sugar.

Drop the balls in and cover tightly. Cook for 10–12 minutes.

They should double in size. Re
move gently and let cool.




Step 4: Prepare Rabri (Milk Syrup)

In another pan, boil 1L milk. Simmer until it reduces slightly (around 10–15 mins).

Add sugar, cardamoms, saffron, and rose water. Stir and simmer gently.

Turn off heat and let it cool slightly.


Step 5: Assemble Ras Malai

Gently squeeze the sugar water from rasgullas and drop into the warm milk syrup.

Chill for a few hours in the fridge.

♡ Use full-fat milk only for both chena and rabri.

♡ Don’t over-knead the chena — stop once it’s smooth.

♡ Cover tightly while cooking rasgullas to trap steam.
